Ingredients
  

  • For the Pork Souvlaki
  • 1½ lbs pork shoulder or pork loin, cut into 1½-inch cubes
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 4 cloves garlic, minced
  • 1½ teaspoons dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • For the Tzatziki Sauce
  • 1½ cups Greek yogurt (full-fat preferred)
  • 1 medium cucumber, grated and squeezed dry
  • 2 cloves garlic, finely minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice or white vinegar
  • Salt, to taste
  • 1 tablespoon fresh dill or mint, chopped (optional)

Instructions
 

  • Make the marinade: In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.
  • Marinate pork: Toss pork cubes in marinade, cover, and refrigerate for at least 1 hour (up to 8 hours).
  • Prepare tzatziki: Combine yogurt, grated cucumber, garlic, olive oil, lemon juice, salt, and herbs. Chill until ready.
  • Skewer pork: Thread marinated pork onto skewers evenly.
  • Preheat grill: Heat grill or grill pan to medium-high.
  • Cook skewers: Grill for 10–12 minutes, turning occasionally, until lightly charred and cooked through.
  • Rest: Let skewers rest for a few minutes before serving.
