Ingredients
  

  • For the Nachos:
  • 1 large bag (12 oz) tortilla chips
  • 2 cups pulled pork (barbecue-flavored or plain, shredded)
  • 1 ½ cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese (or pepper jack for spice)
  • ½ cup pickled jalapeño slices (or fresh, thinly sliced)
  • ½ cup barbecue sauce
  • ½ cup black beans, drained and rinsed (optional)
  • ¼ cup diced red onion
  • ½ cup corn kernels (optional)
  • 2 tbsp olive oil or butter (for warming pulled pork)
  • For Serving:
  • Sour cream, for topping
  • Guacamole or sliced avocado
  • Fresh cilantro, chopped
  • Lime wedges
  • Diced tomatoes or pico de gallo

Instructions
 

  • Step 1: Preheat the Oven : Preheat your oven to 400°F (200°C). Line a large baking sheet or ovenproof platter with parchment paper or foil for easy cleanup.
  • Step 2: Warm the Pulled Pork : In a skillet, heat olive oil over medium heat. Add the pulled pork and barbecue sauce, stirring until hot and coated evenly. This adds moisture and enhances flavor.
  • Step 3: Prepare the Nacho Base : Spread half of the tortilla chips in an even layer on the baking sheet. Sprinkle with half the cheeses, half the pulled pork, some onions, black beans, and jalapeños.
  • Step 4: Layer and Repeat : Add the remaining chips, followed by the rest of the pulled pork, cheese, corn, onions, and jalapeños. This ensures every bite has toppings!
  • Step 5: Bake Until Cheese Melts : Place the tray in the oven and bake for 10–12 minutes, or until the cheese is melted and bubbly.
  • Step 6: Add Fresh Toppings : Remove from oven and top with sour cream, guacamole, cilantro, diced tomatoes, and a squeeze of lime juice.
  • Step 7: Serve Hot! : Serve immediately while the cheese is still warm and gooey.
