For the “Dirt” Layer:
- 24 chocolate sandwich cookies (Oreos), crushed finely
For the Pumpkin Cream Filling:
- 1 (3.4 oz) box instant vanilla pudding mix
- 1 ½ cups cold milk
- ½ cup pumpkin purée (not pumpkin pie filling)
- ½ tsp pumpkin pie spice
- 4 oz cream cheese, softened
- 1 cup whipped topping (like Cool Whip)
For Decoration:
- Candy pumpkins (mellowcreme or similar)
- Gummy worms (optional, for a creepy touch)
- Fresh mint leaves (to resemble pumpkin vines)
Make the “Dirt” Place cookies in a food processor or sealable bag and crush into fine crumbs. Set aside.
Prepare the Pumpkin Filling In a mixing bowl, whisk pudding mix and milk until thickened. Add pumpkin purée and pumpkin pie spice, whisking until smooth. Beat softened cream cheese separately until fluffy, then fold into the pudding mixture. Gently fold in whipped topping for a light, creamy texture.
Assemble the Cups Place a spoonful of cookie crumbs at the bottom of each cup. Add a layer of pumpkin filling. Repeat layers until cups are filled, ending with cookie crumbs on top.
Decorate Place 1–2 candy pumpkins on top of each cup. Add gummy worms crawling out of the “dirt.” Garnish with mint leaves for a realistic pumpkin patch look.
