For the Quesadillas:
- 8 small flour tortillas (or corn tortillas if preferred)
- 2 cups shredded cheddar cheese (or Mexican blend cheese)
- ½ cup shredded mozzarella cheese (for gooey texture)
- ½ cup cooked chicken, black beans, or sautéed veggies (optional for extra filling)
- 2 tbsp butter or olive oil (for cooking)
For the Pumpkin Look:
- 1 tsp paprika or chili powder (optional, to add orange tint when brushing tortillas)
- 1 tbsp olive oil (for brushing)
Prepare the Pumpkin Faces Lay out 4 tortillas and, using a small sharp knife, cut jack-o’-lantern faces (triangular eyes, nose, and a jagged smile). Leave the other 4 tortillas uncut, as they will serve as the bottoms.
Assemble the Quesadillas Place the uncut tortillas on a flat surface. Sprinkle evenly with cheddar and mozzarella cheese. Add optional fillings like chicken, beans, or sautéed veggies. Place the cut-out “pumpkin face” tortillas on top to complete the sandwich.
Cook the Quesadillas Brush the tops lightly with olive oil. Optionally, mix paprika or chili powder into oil before brushing to give the tortillas an orange hue. Heat a skillet or griddle over medium heat. Cook each quesadilla for 2–3 minutes per side, pressing gently with a spatula, until golden and crispy. The cheese should be fully melted, holding the two tortillas together.
