Ingredients
  

For the Fudge:

  • 2 ½ cups white chocolate chips
  • 1 cup granulated sugar
  • ¾ cup packed brown sugar
  • ¾ cup unsalted butter
  • ⅔ cup evaporated milk
  • ⅓ cup pumpkin puree (not pumpkin pie filling)
  • 2 tsp pumpkin pie spice (or mix of cinnamon, nutmeg, ginger, cloves)
  • 1 tsp pure vanilla extract
  • Pinch of salt

Optional Decoration:

  • Halloween sprinkles, candy eyeballs, or orange/black sugar crystals

Instructions
 

  • Prepare the Pan Grease and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy lifting.
  • Make the Pumpkin Base In a saucepan over medium heat, combine butter, granulated sugar, brown sugar, evaporated milk, and pumpkin puree. Stir constantly until the mixture comes to a boil. Continue boiling gently for 10–12 minutes, stirring often, until it thickens slightly.
  • Add the Chocolate and Flavor Remove from heat. Stir in white chocolate chips until fully melted and smooth. Add pumpkin pie spice, vanilla extract, and salt. Mix well.
  • Set the Fudge Pour mixture into prepared baking dish. Smooth the top with a spatula. Add Halloween sprinkles or candies on top if desired. Let cool at room temperature for 30 minutes, then refrigerate for at least 2–3 hours until firm.
  • Cut and Serve Lift fudge from the pan using parchment paper. Cut into neat squares with a sharp knife.
