For the Fudge:
- 2 ½ cups white chocolate chips
- 1 cup granulated sugar
- ¾ cup packed brown sugar
- ¾ cup unsalted butter
- ⅔ cup evaporated milk
- ⅓ cup pumpkin puree (not pumpkin pie filling)
- 2 tsp pumpkin pie spice (or mix of cinnamon, nutmeg, ginger, cloves)
- 1 tsp pure vanilla extract
- Pinch of salt
Optional Decoration:
- Halloween sprinkles, candy eyeballs, or orange/black sugar crystals
Prepare the Pan Grease and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy lifting.
Make the Pumpkin Base In a saucepan over medium heat, combine butter, granulated sugar, brown sugar, evaporated milk, and pumpkin puree. Stir constantly until the mixture comes to a boil. Continue boiling gently for 10–12 minutes, stirring often, until it thickens slightly.
Add the Chocolate and Flavor Remove from heat. Stir in white chocolate chips until fully melted and smooth. Add pumpkin pie spice, vanilla extract, and salt. Mix well.
Set the Fudge Pour mixture into prepared baking dish. Smooth the top with a spatula. Add Halloween sprinkles or candies on top if desired. Let cool at room temperature for 30 minutes, then refrigerate for at least 2–3 hours until firm.
Cut and Serve Lift fudge from the pan using parchment paper. Cut into neat squares with a sharp knife.
