Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 2 cups milk (dairy or plant-based)
  • ½ cup pumpkin puree (canned or fresh)
  • 2 tablespoons pure maple syrup (plus extra for serving)
  • 1 teaspoon pumpkin pie spice (or ½ tsp cinnamon, ¼ tsp nutmeg, ⅛ tsp cloves)
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: chopped nuts, pumpkin seeds, raisins, fresh fruits, or a dollop of yogurt

Instructions
 

  • Combine Ingredients: In a medium saucepan, combine oats, milk, pumpkin puree, pumpkin pie spice, and a pinch of salt. Stir well.
  • Cook the Oats: Heat over medium heat, stirring occasionally. Bring to a gentle simmer and cook for 8-10 minutes, or until oats are creamy and thickened.
  • Add Sweetener and Flavor: Remove from heat and stir in maple syrup and vanilla extract. Taste and adjust sweetness if needed.
  • Serve: Divide oatmeal into bowls and top with your favorite toppings, such as nuts, seeds, or extra maple syrup.
