- 8 oz (225 g) fresh chorizo sausage, casing removed
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups whole milk (warm)
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese (or Oaxaca cheese for authenticity)
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 jalapeño, seeded and diced (optional, for extra heat)
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Tortilla chips, for serving
Cook the Chorizo Heat a skillet over medium-high heat. Add chorizo and cook until browned and crumbly, about 5–7 minutes. Remove chorizo from the skillet and drain excess fat. Set aside.
Make the Roux In a medium saucepan, melt butter over medium heat. Stir in flour and cook for 1–2 minutes until golden and nutty, forming a roux.
Add Milk Slowly whisk in warm milk, ensuring no lumps form. Cook until the sauce thickens slightly.
Melt the Cheese Reduce heat to low and stir in cheddar and Monterey Jack cheese gradually until smooth and creamy.
