  • 1 cup medium-grain or short-grain white rice
  • 4 cups whole milk
  • 1 cup water
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ cup raisins
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional Garnishes
  • Additional cinnamon for sprinkling
  • Whipped cream
  • Toasted nuts (almonds, pistachios, or walnuts)

Instructions
 

  • Step 1: Prepare the Rice : Rinse the rice under cold water until the water runs mostly clear. Add rice and 1 cup water to a saucepan and bring to a simmer. Cook until most of the water is absorbed, about 5 minutes.
  • Step 2: Add Milk and Simmer : Pour in the milk and add the sugar, salt, and raisins. Stir well and bring the mixture to a gentle simmer. Reduce heat to low and cook uncovered for 30–35 minutes, stirring frequently to prevent sticking.
  • Step 3: Add Flavoring : Once the pudding becomes thick and creamy, stir in the ground cinnamon and vanilla extract. Cook for another 2 minutes to blend the flavors.
  • Step 4: Adjust the Texture : If the pudding becomes too thick, add a splash of milk to loosen it. If it’s too thin, simmer a little longer. It will thicken more as it cools.
  • Step 5: Serve or Chill : Serve warm for a soothing dessert. For chilled pudding, refrigerate for at least 1–2 hours before serving.
