Ingredients
  

  • 2 medium acorn squash, halved and seeded
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon (optional)
  • ½ teaspoon ground nutmeg (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions
 

  • Step 1: Prepare the Squash : Preheat oven to 400°F (200°C). Slice acorn squash in half lengthwise and scoop out seeds and stringy pulp. Lightly score the flesh in a crosshatch pattern to help it roast evenly.
  • Step 2: Make Maple Butter : In a small bowl, mix softened butter, maple syrup, cinnamon, nutmeg, salt, and pepper until well combined. Adjust sweetness or spices according to your taste.
  • Step 3: Coat the Squash : Place the squash halves cut-side up on a parchment-lined baking sheet. Spread the maple butter mixture evenly over the flesh of each half.
  • Step 4: Roast the Squash : Roast in the preheated oven for 40–45 minutes, or until the squash is tender when pierced with a fork and caramelized on top. Optional: Halfway through roasting, spoon pan juices over the squash for extra richness.
  • Step 5: Garnish and Serve : Remove from the oven and let cool slightly. Sprinkle with fresh parsley for a pop of color and freshness. Serve warm as a side dish.
