2 cups cooked or canned chickpeas (about 1 can, drained and rinsed)

Spice Mix (customize to your liking):
½ teaspoon garlic powder
½ teaspoon smoked paprika
¼ teaspoon cumin powder
¼ teaspoon chili powder or cayenne (optional for heat)

½ teaspoon turmeric (optional, for color and flavor)
Instructions
Step 1: Prepare the Chickpeas : Preheat the oven to 400°F (200°C). Drain and rinse the chickpeas thoroughly. Spread them on a clean kitchen towel or paper towel and pat completely dry. Removing excess moisture is key to achieving a crispy texture. For extra crunch, gently rub them with the towel to remove some of the skins (optional but helpful).
Step 2: Season the Chickpeas : Transfer dried chickpeas to a mixing bowl. Drizzle with olive oil and toss until evenly coated. Add all the spices and salt, then toss again to coat well.
Step 3: Roast Until Crispy : Spread the chickpeas in a single layer on a baking sheet lined with parchment paper. Roast for 35–40 minutes, shaking or stirring halfway through for even cooking. They’re done when golden, crunchy, and dry to the touch. Turn off the oven, leave the door slightly open, and let them rest inside for 5–10 minutes to maintain crispiness.
