Preheat the oven to 200°C (400°F).
Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft.
Season the pork chops on both sides with salt, pepper, paprika, and Italian seasoning.
Heat a baking dish lightly greased with olive oil and place the pork chops inside.
Squeeze the roasted garlic cloves into a bowl and mash into a smooth paste.
Mix the garlic paste with butter, Parmesan, and parsley until well combined.
Spread the garlic Parmesan mixture evenly over each pork chop.
Bake uncovered for 25–30 minutes, or until the pork reaches an internal temperature of 63°C (145°F).
Let the pork chops rest for 5 minutes before serving.
