Ingredients
  

  • For the Pork Chops:
  • 4 bone-in pork chops (about 1-inch thick, 6–8 oz each)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and freshly ground black pepper, to taste
  • 1 tsp garlic powder
  • ½ tsp paprika
  • 1 tsp fresh thyme or rosemary (or ½ tsp dried)
  • 🍎 For the Apples u0026 Onions:
  • 2 medium apples (such as Honeycrisp, Fuji, or Granny Smith), cored and sliced
  • 1 large yellow onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp brown sugar (optional, for deeper caramelization)
  • 1 tbsp apple cider vinegar or white wine (for deglazing)
  • ½ cup low-sodium chicken broth

Instructions
 

  • Step 1: Preheat and Prep : Preheat your oven to 400°F (200°C). Pat pork chops dry with paper towels to remove excess moisture — this helps them sear nicely. Season both sides with salt, pepper, garlic powder, paprika, and herbs.
  • Step 2: Sear the Pork Chops : Heat 1 tbsp olive oil and 1 tbsp butter in a large oven-safe skillet over medium-high heat. Once hot, add pork chops and sear for 2–3 minutes per side until golden brown. Transfer them to a plate (they will finish cooking in the oven).
  • Step 3: Sauté Apples and Onions : In the same skillet, reduce heat to medium. Add another 1 tbsp olive oil and butter, then toss in the sliced onions and apples. Sprinkle a pinch of salt and brown sugar. Cook for 5–7 minutes, stirring occasionally, until softened and golden.
  • Step 4: Deglaze the Pan : Add apple cider vinegar (or white wine) and stir to loosen any browned bits from the pan. Pour in chicken broth and let it simmer for 1–2 minutes.
  • Step 5: Roast Everything Together : Nestle the seared pork chops back into the skillet with the apples and onions. Spoon some of the mixture over the top. Transfer the skillet to the oven and roast for 12–15 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  • Step 6: Rest and Serve : Remove the skillet from the oven and let the pork chops rest for 5 minutes before serving. The resting period helps the juices redistribute, keeping the meat tender and flavorful.
