Step 3: Shape the Meatballs : Using your hands or a small scoop, form mixture into 1.5-inch meatballs (about the size of a golf ball). Place meatballs evenly on the prepared baking sheet. Lightly brush or drizzle olive oil over the tops for better browning.
Step 4: Roast the Meatballs : Roast in the preheated oven for 20–25 minutes, turning once halfway through, until meatballs are cooked through (internal temperature 165°F / 74°C) and golden brown.
Step 5: Make the Cranberry Sauce: While meatballs roast, combine cranberries, sugar, water, orange juice, and orange zest in a small saucepan. Cook over medium heat, stirring occasionally, until cranberries burst and the sauce thickens (about 10–12 minutes). Optional: add a pinch of cinnamon or nutmeg for extra warmth. Remove from heat and let cool slightly; sauce will thicken further as it cools.
Step 6: Serve: Arrange roasted turkey meatballs on a serving platter. Spoon cranberry sauce over the meatballs or serve on the side for dipping. Garnish with fresh parsley or thyme if desired.
