Satay Chicken Skewers with Peanut Sauce

Ingredients
  

  • For the Chicken Skewers
  • 500 g chicken breast or thighs, sliced into thin strips
  • 1/2 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Wooden or metal skewers
  • For the Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 1/3 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar or honey
  • 1 tablespoon lime juice
  • 1 teaspoon chili flakes or 1 teaspoon sriracha
  • 1 teaspoon garlic paste
  • Warm water as needed (to adjust consistency)

Instructions
 

  • Prepare the marinade by whisking together coconut milk, soy sauce, brown sugar, curry powder, turmeric, garlic, ginger, lime juice, salt, and pepper.
  • Add the chicken strips and toss well to coat. Cover and refrigerate for at least 1 hour.
  • Meanwhile, soak wooden skewers in water for 20–30 minutes to avoid burning.
  • Thread marinated chicken strips onto skewers.
  • Preheat a grill pan, outdoor grill, or air fryer.
  • Grill skewers for 6–8 minutes on each side until cooked through and lightly charred.
  • For the peanut sauce, combine peanut butter, coconut milk, soy sauce, sweetener, lime juice, garlic, and chili in a bowl. Stir until smooth, adding warm water to thin if needed.
  • Serve skewers hot with peanut sauce.
