Ingredients
  

For the Meatballs (Eyeballs):

  • 1 lb (450 g) ground beef (or ground turkey/chicken)
  • ½ cup breadcrumbs
  • 1 large egg
  • ½ small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped (or 1 tsp dried)
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for cooking)

For the Eyeball Effect:

  • 12 small mozzarella balls (bocconcini) OR sliced mozzarella rounds
  • 12 black olives (pitted, sliced into circles)

For the Spaghetti u0026 Sauce:

  • 12 oz (340 g) spaghetti
  • 4 cups marinara sauce (homemade or store-bought)
  • 2 tbsp olive oil
  • Fresh basil or parsley for garnish

Instructions
 

  • Make the Meatballs Preheat oven to 375°F (190°C). In a large bowl, combine ground meat, breadcrumbs, egg, onion, garlic, parsley, Parmesan, Italian seasoning, salt, and pepper. Mix until well combined, but don’t overwork the mixture. Shape into 12 equal meatballs. Heat olive oil in a skillet and sear the meatballs until browned on all sides (about 5 minutes). Transfer to a baking sheet and bake for 15–20 minutes, or until fully cooked (internal temp: 160°F / 71°C).
  • Create the Eyeballs Remove meatballs from oven and immediately top each with a slice of mozzarella or a small mozzarella ball. Place a sliced olive in the center of the cheese to resemble a pupil. Return to oven for 2–3 minutes until cheese melts slightly.
  • Cook the Pasta u0026 Sauce While meatballs cook, bring a large pot of salted water to boil. Cook spaghetti according to package instructions until al dente. Drain. In a saucepan, warm marinara sauce with olive oil. Toss spaghetti with the sauce.
  • Assemble the Dish Plate spaghetti onto serving dishes. Place “eyeball” meatballs on top so they look like they’re staring up from the pasta. Garnish with fresh basil or parsley for a pop of color.
