- 8 oz pasta (penne, rotini, or fusilli)
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 teaspoon paprika or chili powder (optional)
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro or parsley, chopped
- Lime Dressing:
- 3 tablespoons olive oil
- Juice of 2 limes
- 1 clove garlic, minced
- 1 teaspoon honey or maple syrup
- Salt and black pepper to taste
Step 1: Cook Pasta : Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain, rinse under cold water, and set aside to cool.
