Ingredients

For the Pasta and Shrimp:

  • 12 oz fettuccine pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil or butter
  • 2 garlic cloves, minced
  • Salt and black pepper, to taste

For the Alfredo Sauce:

  • 4 tablespoons unsalted butter
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ teaspoon nutmeg (optional, for warmth)
  • Salt and pepper, to taste

For Garnish:

  • Fresh parsley, chopped
  • Extra Parmesan cheese

Instructions

  • Cook the Pasta Bring a large pot of salted water to a boil. Add fettuccine and cook until al dente (about 8–10 minutes). Drain and reserve ½ cup pasta water in case you need to thin the sauce.
  • Cook the Shrimp Heat olive oil or butter in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
  • Make the Alfredo Sauce In the same skillet, melt butter over medium heat. Add heavy cream and simmer gently for 2–3 minutes. Stir in Parmesan cheese, whisking until smooth and creamy. Season with nutmeg, salt, and pepper.
  • Combine Everything Add drained pasta to the sauce, tossing to coat evenly. Return shrimp to skillet and gently mix into pasta. If sauce is too thick, add reserved pasta water a little at a time.
  • Garnish and ServeSprinkle with fresh parsley and extra Parmesan. Serve immediately while hot and creamy.
