Shrimp Fried Rice with Garlic Butter

Ingredients
  

  • For the garlic butter shrimp:
  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons butter
  • 4 garlic cloves, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • 1 teaspoon lemon juice
  • For the fried rice:
  • 3 cups cooked and cooled rice (preferably day-old)
  • 2 tablespoons oil (canola, sesame, or vegetable)
  • 1 medium onion, finely chopped
  • 1 cup mixed veggies (peas, carrots, corn)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • ½ teaspoon chili flakes (optional)
  • 2 green onions, chopped

Instructions
 

  • Heat a large pan or wok over medium heat and melt the butter.
  • Add minced garlic and sauté for 30–40 seconds until fragrant.
  • Add shrimp, salt, pepper, and paprika and cook for 2–3 minutes or until shrimp turns pink. Add lemon juice. Remove shrimp and set aside.
  • In the same pan, heat oil and add onions. Cook until translucent.
  • Add mixed veggies and cook for 2–3 minutes.
  • Push veggies to one side and pour the beaten eggs into the empty space. Scramble until just set.
  • Add the cooled rice and break apart any clumps. Stir everything together.
  • Add soy sauce, oyster sauce, and chili flakes. Mix well until rice is evenly coated.
  • Return the garlic butter shrimp to the rice. Toss gently to combine.
  • Add chopped green onions and taste for seasoning.
  • Serve hot.
