Slow Cooker Mongolian Beef with Rice

Ingredients
  

  • For the Mongolian Beef:
  • 1.5 pounds flank steak or sirloin, thinly sliced against the grain
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar, packed
  • 1/4 cup water
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 3 green onions, sliced
  • For Serving:
  • 3 cups cooked white or brown rice
  • Steamed broccoli or snap peas (optional)

Instructions
 

  • Step 1: Slice beef thinly against the grain and toss with cornstarch.
  • Step 2: Brown beef in a skillet (optional) and transfer to slow cooker.
  • Step 3: Mix soy sauce, brown sugar, water, garlic, ginger, and red pepper flakes for sauce.
  • Step 4: Pour sauce over beef, cover, and cook on low for 4-5 hours or high for 2-3 hours.
  • Step 5: Stir in sliced green onions before serving.
  • Step 6: Serve over rice with vegetables.
