Prepare the ribs: Pat the ribs dry and remove the membrane from the back if still attached.
Season: Sprinkle salt, pepper, smoked paprika, onion powder, and garlic powder on both sides.
Make the sauce: In a bowl, mix honey, soy sauce, ketchup, garlic, vinegar, and brown sugar.
Layer in slow cooker: Place ribs inside, curling them around the edges if needed.
Pour sauce: Cover ribs fully with the honey garlic sauce.
Slow cook: Cook 6–8 hours on LOW or 3–4 hours on HIGH until tender.
Optional broil: Transfer ribs to a baking sheet and broil to caramelize. Brush extra sauce over the top.
Thicken leftover sauce: Mix cornstarch and water into a slurry, add to slow cooker liquid, and heat until thickened.
Serve: Pour thickened sauce over ribs and enjoy.
