Ingredients
  

  • 1 lb dried green split peas, rinsed and sorted
  • 1 meaty ham bone, ham hock, or 2 cups diced cooked ham
  • 1 medium onion, diced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust based on the saltiness of the ham)
  • 6 cups chicken broth or vegetable broth
  • 1 tablespoon olive oil (optional, for added richness)

Instructions
 

  • Add split peas, ham, onion, carrots, celery, garlic, herbs, salt, and pepper to the slow cooker.
  • Pour in the broth and give everything a gentle stir.
  • Cover and cook on low for 8 hours or high for 4 hours.
  • Remove ham hock or ham bone, shred meat, and return it to the soup.
  • Stir well until the soup reaches a thick, creamy consistency.
  • Taste and adjust seasonings before serving.
