Ingredients
  

  • For the Turkey Meatballs
  • 1 lb (450 g) ground turkey
  • ½ cup breadcrumbs or oats
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • ½ tsp dried oregano
  • Salt and black pepper to taste
  • For the Soup
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken or turkey broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional Add-ins:
  • 1 cup spinach or kale
  • ½ cup small pasta or rice

Instructions
 

  • In a bowl, mix ground turkey, breadcrumbs, egg, garlic, parsley, oregano, salt, and pepper.
  • Shape mixture into small meatballs (about 1 inch).
  • Heat olive oil in a skillet and lightly brown meatballs (optional but recommended).
  • Add onion, carrots, celery, garlic, broth, tomatoes, seasoning, and bay leaf to the slow cooker.
  • Gently add meatballs to the slow cooker.
  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  • Add greens or pasta during the last 30 minutes if using.
  • Adjust seasoning and remove bay leaf before serving.
