- 12 oz (340 g) pasta (rotini, penne, or farfalle)
- 6 oz (170 g) smoked salmon, cut into bite-sized pieces
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ¼ cup red onion, finely chopped
- 2 tablespoons capers, drained
- 2 tablespoons fresh dill, chopped
- Salt and freshly ground black pepper, to taste
- For the Dill Dressing
- ½ cup Greek yogurt or mayonnaise
- 2 tablespoons sour cream
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 2 tablespoons fresh dill, chopped
- 1 small garlic clove, minced
- Salt and black pepper, to taste
Step 1: Cook the Pasta : Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Drain and rinse under cold water to stop cooking and cool the pasta.
Step 2: Prepare Vegetables and Salmon : While pasta cooks, halve the cherry tomatoes, dice the cucumber, finely chop the red onion, and cut smoked salmon into bite-sized pieces.
