- 6 slices smoked bacon, chopped
- 1 tbsp butter
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 4 medium potatoes, peeled and diced
- 3 cups chicken broth
- 1 cup milk or half-and-half
- 1/2 cup heavy cream (optional for richness)
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
- 2 tbsp chopped green onions or chives
- 1 bay leaf
Step 1: Cook the Bacon : Heat a large pot over medium heat. Add chopped bacon and cook until crispy. Remove bacon and set aside, leaving some bacon fat in the pot.
Step 2: Sauté the Aromatics : Add butter to the pot. Add chopped onion and sauté until translucent. Add minced garlic and cook for 1 minute until fragrant.
Step 3: Add Potatoes and Broth : Add diced potatoes and mix well. Pour in chicken broth and add the bay leaf. Bring to a boil, then reduce heat. Simmer for 15–20 minutes or until potatoes are tender.
Step 4: Add the Cream Base ; Stir in milk or half-and-half, and heavy cream if using. Add smoked paprika, salt, and pepper. Simmer for 5 more minutes.
Step 5: Adjust Texture : Use a potato masher to lightly mash some potatoes in the pot. For a smoother soup, blend 1–2 cups and return to the pot.
Step 6: Add Final Ingredients : Stir in half of the cooked bacon (reserve some for topping). Add cheddar cheese if you want a cheesy finish. Heat for 2 more minutes on low.
Step 7: Serve : Ladle into bowls. Garnish with crispy bacon, chives, or shredded cheese.
