4–5 large ripe tomatoes, chopped (or 1 can of whole peeled tomatoes, chopped)
3 tbsp extra virgin olive oil
3 cloves garlic, minced
½ tsp salt (adjust to taste)
¼ tsp black pepper
¼ tsp red pepper flakes (optional for slight heat)
1 cup fresh basil leaves, torn or chopped
1 tsp sugar (optional, to balance acidity)
¼ cup grated Parmesan cheese (optional, for serving)
Instructions
Step 1: Cook the Spaghetti : Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain the pasta, reserving ½ cup pasta water, and set aside.
Step 2: Prepare the Fresh Tomato Basil Sauce : Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds to 1 minute until fragrant, but not browned. Add chopped fresh tomatoes (or canned) to the skillet. Season with salt, black pepper, and red pepper flakes if using. Simmer uncovered for 10–15 minutes, stirring occasionally, until tomatoes break down into a sauce. Taste the sauce and add sugar if the tomatoes are too acidic.
Step 3: Add Fresh Basil : Remove the skillet from heat and stir in fresh basil leaves. Let the sauce sit for 1–2 minutes to allow the flavors to meld.
Step 4: Combine Pasta and Sauce : Add cooked spaghetti to the skillet with the sauce. Toss well to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
Step 5: Serve : Plate the pasta and drizzle with extra olive oil if desired. Top with freshly grated Parmesan cheese and extra fresh basil. Serve immediately while hot.
