Instructions
Step 1: Cook the Pasta : Bring a large pot of salted water to a boil. Add penne pasta and cook until al dente (about 9–11 minutes, or as per package instructions). Drain, reserving ½ cup of pasta water, and set aside.
Step 2: Make the Arrabbiata Sauce : Heat olive oil in a large skillet or saucepan over medium heat. Add sliced garlic (and onion, if using) and sauté until fragrant and lightly golden. Stir in chili flakes and cook for 30 seconds. Add crushed tomatoes, tomato paste, salt, pepper, and sugar. Let the sauce simmer for 12–15 minutes until it thickens and flavors develop.
Step 3: Combine Pasta and Sauce : Add drained pasta to the sauce and toss until evenly coated. If needed, add reserved pasta water a little at a time to loosen the sauce.
Step 4: Garnish and Serve : Plate pasta and garnish with fresh basil or parsley. Sprinkle with Parmesan cheese if desired.
