Spicy Buffalo Shrimp Wraps

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3–4 tablespoons buffalo sauce (adjust to taste)
  • 4 large flour or whole wheat tortillas
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrots
  • 1/2 cup diced cucumber
  • 1/4 cup sliced red onion
  • 1/4 cup blue cheese crumbles or ranch dressing
  • Salt and black pepper, to taste
  • Optional garnish: chopped fresh cilantro or parsley

Instructions
 

  • Step 1: Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper.
  • Step 2: Add shrimp to the skillet and cook for 2–3 minutes per side until they are pink and opaque.
  • Step 3: Remove the skillet from heat and toss the shrimp in buffalo sauce until evenly coated.
  • Step 4: Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
  • Step 5: Lay a tortilla flat and layer with shredded lettuce, carrots, cucumber, red onion, and blue cheese crumbles or a drizzle of ranch dressing.
  • Step 6: Top with the buffalo-coated shrimp. Fold in the sides of the tortilla and roll tightly to form a wrap.
  • Step 7: Repeat for the remaining tortillas and serve immediately.
