Ingredients
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
3–4 tablespoons buffalo sauce (adjust to taste)
4 large flour or whole wheat tortillas
1 cup shredded lettuce
1/2 cup shredded carrots
1/2 cup diced cucumber
1/4 cup sliced red onion
1/4 cup blue cheese crumbles or ranch dressing
Salt and black pepper, to taste
Optional garnish: chopped fresh cilantro or parsley
Instructions
Step 1: Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper.
Step 2: Add shrimp to the skillet and cook for 2–3 minutes per side until they are pink and opaque.
Step 3: Remove the skillet from heat and toss the shrimp in buffalo sauce until evenly coated.
Step 4: Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
Step 5: Lay a tortilla flat and layer with shredded lettuce, carrots, cucumber, red onion, and blue cheese crumbles or a drizzle of ranch dressing.
Step 6: Top with the buffalo-coated shrimp. Fold in the sides of the tortilla and roll tightly to form a wrap.
Step 7: Repeat for the remaining tortillas and serve immediately.
