Spicy Chicken Burrito Bowl with Cilantro Lime Rice

Ingredients
  

  • For the Spicy Chicken:
  • 2 large boneless, skinless chicken breasts (or 500 g)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (adjust to taste)
  • Salt and pepper, to taste
  • Juice of ½ lime
  • For the Cilantro Lime Rice:
  • 2 cups cooked white or brown rice (preferably basmati or jasmine)
  • 1 tbsp butter or olive oil
  • Juice and zest of 1 lime
  • ¼ cup chopped fresh cilantro
  • Salt, to taste
  • For the Bowl Toppings:
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes or salsa
  • 1 avocado, sliced or mashed
  • ½ cup shredded lettuce
  • ¼ cup shredded cheddar or Mexican blend cheese (optional)
  • 2 tbsp sour cream or Greek yogurt
  • Lime wedges, for garnish

Instructions
 

  • Step 1: Marinate and Cook the Chicken : In a bowl, combine olive oil, chili powder, paprika, cumin, garlic powder, cayenne pepper, salt, pepper, and lime juice. Coat the chicken evenly with the marinade and let sit for at least 10–15 minutes (longer if you have time). Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5–6 minutes per side until cooked through and slightly charred. Remove from heat, rest for 5 minutes, then slice into strips.
  • Step 2: Prepare the Cilantro Lime Rice : In a pan, melt butter or heat olive oil over low heat. Add cooked rice and toss gently. Stir in lime juice, lime zest, chopped cilantro, and salt. Mix well and set aside.
  • Step 3: Prepare the Bowl Toppings : Warm black beans and corn separately (if desired). Slice avocado, shred lettuce, and prepare salsa or diced tomatoes.
  • Step 4: Assemble the Burrito Bowls : In each bowl, add a generous scoop of cilantro lime rice as the base. Top with sliced spicy chicken. Add spoonfuls of black beans, corn, avocado, salsa, and lettuce around the bowl. Drizzle with a little lime juice and top with sour cream or cheese, if using.
  • Step 5: Serve : Serve immediately while the chicken is warm. Garnish with extra cilantro and lime wedges for that final fresh kick.
