  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • ½ teaspoon chili powder (optional, for extra heat)
  • 1 teaspoon garam masala (added at the end)
  • 1 can (15 oz) diced tomatoes (or 2 medium tomatoes, chopped)
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 can (14 oz) full-fat coconut milk
  • 4 cups fresh baby spinach (or 2 cups frozen spinach, thawed and drained)
  • Salt, to taste
  • Juice of half a lemon (optional, for brightness)
  • Fresh cilantro, chopped (for garnish)

Instructions
 

  • Step 1: Sauté Aromatics: In a large pot or deep skillet, heat the coconut oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5-7 minutes.
  • Step 2: Add Garlic, Ginger u0026 Chilies: Stir in the garlic, ginger, and green chilies. Cook for another 1-2 minutes until fragrant.
  • Step 3: Toast the Spices: Add cumin, coriander, turmeric, paprika, and chili powder. Stir well and let the spices toast for 30 seconds to a minute, releasing their oils and aromas.
  • Step 4: Add Tomatoes: Pour in the diced tomatoes and cook for about 5 minutes, stirring occasionally, until they break down and meld into the spice base.
  • Step 5: Add Chickpeas u0026 Coconut Milk: Add the chickpeas and coconut milk. Stir well to combine. Bring to a gentle simmer, reduce the heat to low, and let it simmer for 15–20 minutes uncovered, stirring occasionally.
