2 lbs (900 g) chicken wings, separated into flats and drumettes

½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon garlic powder
1 tablespoon baking powder (for extra crispiness)
For the Garlic Parmesan Sauce:
4 tablespoons unsalted butter
4 cloves garlic, minced
½ teaspoon red pepper flakes (adjust to taste)
½ cup grated Parmesan cheese (freshly grated is best)
1 tablespoon chopped fresh parsley
½ teaspoon lemon juice (optional, for brightness)
Salt and pepper, to taste
Instructions
Step 1: Prepare the Chicken Wings : Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top. Pat the wings completely dry with paper towels to ensure crispiness. In a large bowl, toss wings with olive oil, baking powder, salt, pepper, paprika, and garlic powder. Arrange wings in a single layer on the rack.
Step 2: Bake the Wings ; Bake for 40–45 minutes, flipping halfway through, until golden and crispy. (Optional) Broil for 2–3 minutes for extra crunch.
Step 3: Make the Garlic Parmesan Sauce : In a small saucepan, melt the butter over medium heat. Add minced garlic and red pepper flakes. Sauté for 1–2 minutes until fragrant (do not burn the garlic). Remove from heat and stir in Parmesan cheese, parsley, and lemon juice (if using). Season with a pinch of salt and pepper.
Step 4: Toss the Wings : Once the wings are crispy and cooked, transfer them to a large mixing bowl. Pour the hot garlic Parmesan sauce over the wings. Toss until evenly coated and glossy.
