Spicy Ground Beef Ramen Noodles with Vegetables

Ingredients
  

  • 1 lb (450 g) ground beef
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 medium carrot, julienned or thinly sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1–2 tablespoons sriracha or chili paste (adjust to taste)
  • 1 teaspoon sesame oil
  • 2 cups beef or chicken broth
  • 2 packages instant ramen noodles (discard seasoning packets)
  • 2 green onions, chopped for garnish
  • Sesame seeds for garnish (optional)

Instructions
 

  • Prep Ingredients: Wash and chop all vegetables and aromatics.
  • Cook Beef: Brown ground beef in oil until fully cooked. Remove excess fat.
  • Add Aromatics: Stir in garlic, ginger, and onion until fragrant.
  • Add Vegetables: Stir-fry bell pepper, broccoli, and carrot until tender-crisp.
  • Make Sauce: Mix soy sauce, hoisin, sriracha, and sesame oil. Pour over beef and vegetables.
  • Cook Noodles: Boil ramen noodles in broth, drain, and reserve some liquid.
  • Combine: Add noodles to skillet, toss with beef, vegetables, and sauce.
  • Garnish and Serve: Top with green onions and sesame seeds.
