Spicy Korean Meatballs with Sesame Sauce

Ingredients
  

  • For the Meatballs
  • 1 lb (450 g) ground beef or ground pork (or a mix)
  • 1 egg
  • ½ cup breadcrumbs
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 2 scallions, finely chopped
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • For the Sesame Sauce
  • 3 tablespoons soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon gochujang
  • 1 teaspoon grated garlic
  • 1 teaspoon grated ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
  • 1 tablespoon toasted sesame seeds
  • For Serving
  • Sliced scallions
  • Extra sesame seeds
  • Steamed rice or noodles (optional)

Instructions
 

  • Mix all the meatball ingredients until well combined.
  • Roll into 1-inch balls.
  • Cook the meatballs in a skillet until browned and fully cooked.
  • Prepare the sesame sauce by heating all sauce ingredients and thickening with cornstarch slurry.
  • Add meatballs to the sauce and coat evenly.
  • Garnish and serve immediately.
