- 2 stalks fresh lemongrass, trimmed and smashed
- 1-inch piece fresh ginger, sliced
- 2 cloves garlic, minced
- 1–2 red chilies, sliced
- 1 tablespoon red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 can (14 oz) coconut milk
- 8 oz rice noodles
- 1 cup shredded cooked chicken or tofu for vegetarian option
- 1 cup mushrooms, sliced
- 1 red bell pepper, thinly sliced
- 1 cup baby spinach or bok choy
- Fresh cilantro and green onions for garnish
- Optional: lime wedges and chili flakes for extra heat
Step 1: Prepare lemongrass by trimming and lightly smashing stalks.
