Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1–2 teaspoons red chili flakes (adjust to heat preference)
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar
  • 150 grams (5 oz) noodles (ramen, rice noodles, or egg noodles)
  • Salt and black pepper, to taste
  • 2 green onions, chopped (for garnish)
  • Fresh cilantro or parsley, chopped (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions
 

  • Step 1: Heat olive oil, sauté onion 3–4 minutes until soft.
  • Step 2: Add garlic, ginger, chili flakes, cook 1–2 minutes.
  • Step 3: Add diced tomatoes, tomato paste, broth, soy sauce, sugar; simmer 15 minutes.
  • Step 4: Cook noodles separately or in the soup for the last 5 minutes.
  • Step 5: Combine noodles and soup if cooked separately.
  • Step 6: Garnish with green onions, herbs, and lime. Serve immediately.
