Step 1: Prepare the Filling : Heat olive oil or butter in a pan over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add chopped spinach and cook for 2–3 minutes until wilted (or warmed if using frozen spinach). Remove from heat and let cool slightly. In a bowl, mix the cooked spinach with ricotta, mozzarella, Parmesan, nutmeg, salt, and pepper until creamy and well combined.
Step 2: Prepare the Puff Pastry : Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Roll out the puff pastry sheet slightly to smooth any creases. Spread the spinach-cheese filling evenly over half of the pastry sheet. Fold the other half over the filling, pressing gently to seal.
Step 3: Cut and Twist : Using a sharp knife or pizza cutter, slice the folded pastry into 12–14 strips (about 1 inch wide). Hold both ends of each strip and twist it several times to create a spiral. Place the twists on the prepared baking sheet, leaving a little space between each. Brush the tops with beaten egg (mixed with milk for shine, if desired). Sprinkle with Parmesan or sesame seeds if using.
Step 4: Bake : Bake for 18–22 minutes, or until golden brown and puffed. Remove from the oven and let cool slightly before serving.
