For the Soup:
- 2 cups dried green split peas, rinsed and sorted
- 1 meaty ham bone (or 2 cups diced cooked ham)
- 1 medium onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 bay leaves
- 1 tsp dried thyme (or 2 sprigs fresh thyme)
- 6 cups chicken broth (or vegetable broth)
- 1–2 cups water (as needed for thinning)
- Salt and black pepper, to taste
For Serving (Optional):
- Croutons or crusty bread
- Fresh parsley, chopped
- Extra diced ham for garnish
