Ingredients
  

For the Peppers:

  • 4 large orange bell peppers (for the Jack-O’-Lantern look)

For the Filling:

  • 1 lb (450g) ground beef (or turkey)
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce (or marinara)
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • Optional: pinch of red pepper flakes for heat

Instructions
 

  • Prepare the Bell Peppers Preheat oven to 375°F (190°C). Slice off the tops of the bell peppers and remove seeds and membranes. Use a small sharp knife to carve Jack-O’-Lantern faces into the sides (triangles for eyes, jagged mouth, etc.). Brush peppers lightly with olive oil.
  • Cook the Filling Heat olive oil in a skillet over medium heat. Add onion and garlic, cooking until softened. Add ground beef, breaking it apart, and cook until browned. Stir in cooked rice, tomato sauce, Italian seasoning, paprika, salt, and pepper. Remove from heat and mix in half the shredded cheese.
  • Stuff and Bake Spoon filling into each hollowed pepper. Sprinkle the remaining cheese on top. Place peppers upright in a baking dish with a little water at the bottom (to steam). Cover loosely with foil and bake for 25 minutes. Remove foil and bake another 10 minutes until cheese is golden and peppers are tender.
