- 1 tablespoon soy sauce
- 1 egg
- ½ cup cornstarch (plus extra if needed)

- ½ cup ketchup
- ⅓ cup rice vinegar (or white vinegar)
- ⅓ cup brown sugar (or white sugar)
- 2 tablespoons soy sauce
- ½ cup pineapple juice (from canned pineapple or fresh)
- 1 tablespoon cornstarch + 2 tablespoons water (slurry, for thickening)
Step 1: Marinate the Pork : In a bowl, combine pork cubes with salt, pepper, soy sauce, and egg. Add cornstarch and toss until pork is well coated. Let rest for 10 minutes.
Step 2: Fry the Pork : Heat oil in a wok or deep pan to 350°F (175°C). Fry pork pieces in batches until golden brown and crispy (about 4–5 minutes per batch). Remove and drain on paper towels.
Step 3: Prepare the Sauce : In a small bowl, whisk together ketchup, vinegar, sugar, soy sauce, and pineapple juice. In a separate cup, mix cornstarch slurry (cornstarch + water).
Step 4: Stir-Fry the Vegetables : In a clean wok, heat 1 tablespoon oil. Stir-fry onion and bell peppers for 2–3 minutes (they should stay slightly crisp). Add pineapple chunks and cook for another 1 minute.
