Sweet Chili Glazed Salmon with Roasted Broccoli

Ingredients
  

  • For the Salmon:
  • 4 (6 oz / 170 g each) salmon fillets, skin on or off
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • For the Sweet Chili Glaze:
  • ⅓ cup sweet chili sauce (store-bought or homemade)
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp honey or maple syrup
  • 1 clove garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp lime juice (or lemon juice)
  • ½ tsp sesame oil (optional, for depth)
  • For the Roasted Broccoli:
  • 3 cups broccoli florets
  • 1½ tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ½ tsp red chili flakes for a kick
  • Garnish:
  • Sesame seeds
  • Chopped scallions or fresh cilantro
  • Lime wedges for serving

Instructions
 

  • Step 1: Preheat Oven : Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.
  • Step 2: Prepare the Broccoli : In a large bowl, toss the broccoli florets with olive oil, salt, and black pepper. Spread them out evenly on one side of the baking sheet.
  • Step 3: Make the Sweet Chili Glaze : In a small bowl, whisk together the sweet chili sauce, soy sauce, honey, minced garlic, ginger, lime juice, and sesame oil. Taste and adjust — add more lime for tang or honey for sweetness.
  • Step 4: Prepare the Salmon : Pat the salmon fillets dry with a paper towel. Brush lightly with olive oil and season both sides with salt and pepper. Place them skin-side down on the other half of the baking sheet.
  • Step 5: Glaze and Bake : Brush a generous amount of the chili glaze over the salmon fillets. Bake for 12–15 minutes, until the salmon is cooked through and flakes easily with a fork. (Optional) For a caramelized top, broil the salmon for an additional 1–2 minutes at the end.
  • Step 6: Roast the Broccoli : While the salmon bakes, the broccoli will roast alongside it. It should be slightly crispy on the edges and tender inside when done.
  • Step 7: Glaze Again u0026 Serve : Once out of the oven, brush the salmon with a final layer of glaze.
  • Sprinkle sesame seeds and scallions on top. Serve immediately with roasted broccoli and lime wedges.
