- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 medium sweet potatoes, peeled and diced
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 can (14 oz) coconut milk (optional for extra creaminess)
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon smoked paprika or mild chili powder
- Salt and pepper to taste
- Juice of half a lemon or lime
- Fresh cilantro or parsley for garnish
Heat olive oil in a large pot over medium heat.
Sauté onion until softened, about 3–4 minutes.
Add garlic and ginger; cook 1 minute.
Add sweet potatoes, red lentils, cumin, turmeric, and smoked paprika; stir well.
Pour in vegetable broth and bring to a boil.
Reduce heat and simmer for 20–25 minutes until lentils and sweet potatoes are soft.
Stir in coconut milk if using and cook 2 more minutes.
Blend the soup using an immersion blender until smooth, or leave it chunky if preferred.
Add lemon juice and adjust seasoning with salt and pepper.
Serve warm with herbs on top.
