3 medium sweet potatoes (about 2 lbs), peeled and cubed

Instructions
Step 1: Sauté Aromatics : Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 4–5 minutes until soft and translucent. Add garlic and grated ginger; sauté for another 1–2 minutes until fragrant.
Step 2: Cook Sweet Potatoes : Add cubed sweet potatoes, cumin, coriander, and a pinch of salt. Stir to coat with aromatics and spices. Pour in broth and bring to a boil. Reduce heat, cover, and simmer for 20–25 minutes until sweet potatoes are tender.
Step 3: Blend the Soup : Use an immersion blender to puree the soup until smooth. Alternatively, transfer soup to a blender in batches.
Step 4: Add Lime and Cream : Stir in lime juice and coconut milk or yogurt if using. Taste and adjust seasoning with salt, pepper, or extra lime juice. Heat through for 2–3 minutes.
Step 5: Serve : Ladle soup into bowls. Garnish with fresh herbs, toasted seeds, or chili flakes as desired.
