Sweet Potato Soup with Ginger and Lime

Ingredients
  

  • 1 tablespoon olive oil or coconut oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 3 medium sweet potatoes (about 2 lbs), peeled and cubed
  • 4 cups vegetable or chicken broth
  • 1 teaspoon ground cumin (optional)
  • ½ teaspoon ground coriander (optional)
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • ½ cup coconut milk or plain yogurt (optional, for creaminess)
  • Fresh cilantro or parsley, for garnish
  • Toasted pumpkin seeds or chili flakes, for garnish (optional)

Instructions
 

  • Step 1: Sauté Aromatics : Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 4–5 minutes until soft and translucent. Add garlic and grated ginger; sauté for another 1–2 minutes until fragrant.
  • Step 2: Cook Sweet Potatoes : Add cubed sweet potatoes, cumin, coriander, and a pinch of salt. Stir to coat with aromatics and spices. Pour in broth and bring to a boil. Reduce heat, cover, and simmer for 20–25 minutes until sweet potatoes are tender.
  • Step 3: Blend the Soup : Use an immersion blender to puree the soup until smooth. Alternatively, transfer soup to a blender in batches.
  • Step 4: Add Lime and Cream : Stir in lime juice and coconut milk or yogurt if using. Taste and adjust seasoning with salt, pepper, or extra lime juice. Heat through for 2–3 minutes.
  • Step 5: Serve : Ladle soup into bowls. Garnish with fresh herbs, toasted seeds, or chili flakes as desired.
