Ingredients

  • For the Teriyaki Beef:
  • 500 g (1 lb) thinly sliced beef sirloin or ribeye
  • 2 tablespoons vegetable oil (for frying)
  • Salt and pepper, to taste
  • For the Teriyaki Sauce:
  • 1/4 cup soy sauce (low sodium preferred)
  • 3 tablespoons brown sugar
  • 2 tablespoons mirin (or rice vinegar + 1 tsp sugar as substitute)
  • 1 tablespoon honey
  • 1 tablespoon sake (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (to thicken)
  • For Serving:
  • 3 cups cooked steamed white rice (short-grain or jasmine)
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, finely sliced
  • Steamed broccoli or mixed vegetables (optional)

Instructions

  • Step 1: Prepare Ingredients : Slice beef thinly across the grain for tenderness. Mince garlic and grate fresh ginger. Measure out sauce ingredients for efficiency.
  • Step 2: Make the Teriyaki Sauce : In a bowl, mix soy sauce, brown sugar, mirin, honey, sake, garlic, and ginger. Stir until sugar dissolves completely.
  • Step 3: Cook the Beef : Heat a large skillet or wok with oil. Add beef slices in a single layer and sear until browned. Avoid overcrowding to ensure even cooking.
  • Step 4: Add and Thicken the Sauce : Pour teriyaki sauce into the pan and toss beef until coated. Add cornstarch slurry and simmer gently until thickened.
  • Step 5: Assemble the Bowl : Scoop warm rice into serving bowls. Top with teriyaki beef and drizzle extra sauce over it. Garnish with sesame seeds, scallions, or steamed vegetables.
