Ingredients
  

  • For the Chicken
  • 1 ½ lbs (680 g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 10–12 wooden or metal skewers
  • For the Teriyaki Marinade
  • ½ cup soy sauce
  • ¼ cup honey or brown sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons mirin (optional for authenticity)
  • 1 tablespoon sesame oil
  • 2 tablespoons minced garlic
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)
  • Optional Garnish
  • Sesame seeds
  • Chopped scallions

Instructions
 

  • Step 1: Prepare the Marinade : In a bowl, whisk together soy sauce, honey, rice vinegar, mirin, sesame oil, garlic, and ginger. Reserve ¼ cup of this marinade in a small pot for later glazing.
  • Step 2: Marinate the Chicken : Add chicken pieces to the remaining marinade. Toss well to coat completely. Cover and refrigerate for 30 minutes (up to 4 hours).
  • Step 3: Prepare the Skewers : If using wooden skewers, soak them in water for 20 minutes to prevent burning. Thread marinated chicken pieces onto the skewers tightly but without overcrowding.
  • Step 4: Cook the Chicken : Grill Method: Preheat grill to medium-high heat. Grill skewers for 10–12 minutes, turning frequently. Stovetop Method: Heat a grill pan with a little oil. Cook skewers for 12–14 minutes, turning to brown all sides. Oven Broil Method: Place skewers on a foil-lined tray. Broil on high for 10–12 minutes, flipping halfway.
  • Step 5: Thicken the Glaze :Heat the reserved marinade over medium heat. Add cornstarch slurry and stir until thickened.
  • Step 6: Final Glazing : Brush the cooked chicken skewers generously with the thickened teriyaki sauce. Garnish with sesame seeds and scallions.
