Ingredients
  

  • For the Stir-Fry:
  • 1 lb pork tenderloin or pork loin, thinly sliced into strips
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium carrot, thinly sliced
  • 1 cup snap peas
  • 2–3 green onions, chopped
  • For the Teriyaki Sauce:
  • ¼ cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp mirin (optional for sweetness)
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp cornstarch mixed with 2 tbsp water (slurry)
  • Optional Garnishes:
  • Sesame seeds
  • Extra chopped green onions
  • Steamed white or brown rice, or noodles

Instructions
 

  • Preparing the Pork and Vegetables: Slice pork into thin strips, season lightly with salt and pepper.
  • Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat.
  • Stir-fry pork strips 3–4 minutes until browned and cooked through. Remove from pan and set aside.
  • Add remaining oil to the pan. Stir-fry broccoli, carrots, bell peppers, and snap peas for 4–5 minutes until crisp-tender.
  • Making the Teriyaki Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, mirin (if using), sesame oil, garlic, and ginger.
  • Add sauce to the vegetables in the pan, return pork to the pan, and toss to combine.
  • Pour cornstarch slurry into the pan and cook for 1–2 minutes, stirring until sauce thickens and coats the pork and vegetables evenly.
