Ingredients

  • 500 g fresh salmon, skin removed and finely chopped
  • 1 egg
  • ½ cup breadcrumbs or panko
  • 2 green onions, finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • Black pepper to taste
  • For the Teriyaki Glaze
  • ¼ cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • For the Sesame Sauce
  • 3 tablespoons tahini or sesame paste
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1 teaspoon rice vinegar
  • 1 to 2 tablespoons warm water, as needed
  • For Garnish
  • Sesame seeds
  • Sliced green onions

Instructions
 

  • Prepare the Salmon : Finely chop the salmon or pulse briefly in a food processor, being careful not to overprocess.
  • Mix the Meatball Base : Combine salmon with egg, breadcrumbs, aromatics, and seasonings until just mixed.
  • Shape the Meatballs : Form uniform meatballs to ensure even cooking.
  • Cook the Meatballs : Pan-fry gently until golden and fully cooked.
  • Make the Teriyaki Glaze : Simmer the glaze ingredients until thick and shiny.
  • Finish with Sauce : Coat the meatballs in teriyaki glaze and prepare the sesame sauce for serving.
