Ingredients
For the Salmon Meatballs
500 g fresh salmon, skin removed and finely chopped
1 egg
½ cup breadcrumbs or panko
2 green onions, finely chopped
1 tablespoon soy sauce
1 teaspoon grated fresh ginger
1 clove garlic, minced
1 teaspoon sesame oil
Black pepper to taste
For the Teriyaki Glaze
¼ cup soy sauce
2 tablespoons honey or brown sugar
1 tablespoon rice vinegar
1 teaspoon cornstarch mixed with 1 tablespoon water
For the Sesame Sauce
3 tablespoons tahini or sesame paste
1 tablespoon soy sauce
1 teaspoon honey
1 teaspoon rice vinegar
1 to 2 tablespoons warm water, as needed
For Garnish
Sesame seeds
Sliced green onions
Instructions
Prepare the Salmon : Finely chop the salmon or pulse briefly in a food processor, being careful not to overprocess.
Mix the Meatball Base : Combine salmon with egg, breadcrumbs, aromatics, and seasonings until just mixed.
Shape the Meatballs : Form uniform meatballs to ensure even cooking.
Cook the Meatballs : Pan-fry gently until golden and fully cooked.
Make the Teriyaki Glaze : Simmer the glaze ingredients until thick and shiny.
Finish with Sauce : Coat the meatballs in teriyaki glaze and prepare the sesame sauce for serving.
