- For the Meatloaf:
- 1 ½ lb (680 g) ground turkey
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup breadcrumbs (whole wheat or regular)
- 1 large egg
- ½ cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- ½ teaspoon smoked paprika
- 2 tablespoons ketchup (plus extra for topping, optional)
- For the Apple Cider Gravy:
- 1 tablespoon butter
- 2 tablespoons all-purpose flour
- 1 cup apple cider
- 1 cup chicken or turkey broth
- Salt and pepper, to taste
- ½ teaspoon dried thyme (optional)
Preparing the Meatloaf: Preheat oven to 375°F (190°C). In a large bowl, combine ground turkey, diced onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, salt, pepper, thyme, smoked paprika, and 2 tablespoons ketchup. Mix until well combined. Shape the mixture into a loaf and place it in a lightly greased 9x5-inch loaf pan (or on a baking sheet lined with parchment). Spread a thin layer of ketchup on top, if desired. Bake for 50–60 minutes, or until internal temperature reaches 165°F (74°C). Remove from oven and let rest 10 minutes before slicing.
Preparing the Apple Cider Gravy: In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes until lightly golden. Gradually whisk in apple cider and broth until smooth. Cook, stirring constantly, until gravy thickens, about 5–7 minutes. Season with salt, pepper, and thyme (if using).
