Turkey Stir-Fry with Vegetables and Rice

Ingredients
  

  • For the Stir-Fry
  • 1 lb (450 g) ground turkey or thinly sliced turkey breast
  • 2 tbsp vegetable oil
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas or green beans
  • 1 carrot, thinly sliced
  • 2 green onions, chopped (for garnish)
  • For the Stir-Fry Sauce
  • 3 tbsp soy sauce (low sodium preferred)
  • 1 tbsp oyster sauce (optional but recommended)
  • 1 tbsp rice vinegar or lime juice
  • 1 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • 1–2 tsp sriracha or chili flakes (optional)
  • ¼ cup chicken broth or water
  • For Serving
  • Cooked white rice, brown rice, or jasmine rice

Instructions
 

  • Step 1: Prepare the Ingredients : Chop and slice all vegetables so they’re ready to go. Mix the stir-fry sauce ingredients in a small bowl and set aside.
  • Step 2: Cook the Turkey : Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the ground or sliced turkey and cook for 4–6 minutes, breaking it apart if using ground meat. Season lightly with salt and pepper. Remove and set aside.
  • Step 3: Sauté the Aromatics : In the same pan, add the remaining tablespoon of oil. Add onion, garlic, and ginger. Cook for 1–2 minutes until fragrant.
  • Step 4: Add the Vegetables : Add bell pepper, broccoli, snap peas, and carrots. Stir-fry for 4–5 minutes until vegetables soften but still have crunch.
  • Step 5: Combine Turkey and Sauce : Return turkey to the pan. Pour in the stir-fry sauce and toss to coat everything. Cook for another 2–4 minutes until the sauce thickens slightly and everything is heated through.
  • Step 6: Serve : Serve hot over a bowl of freshly cooked rice. Garnish with green onions.
