1 lb (450 g) ground turkey or thinly sliced turkey breast
2 tbsp vegetable oil
1 medium onion, sliced
2 garlic cloves, minced
1 tsp grated fresh ginger
1 red bell pepper, sliced
1 cup broccoli florets
1 cup snap peas or green beans
1 carrot, thinly sliced
2 green onions, chopped (for garnish)
For the Stir-Fry Sauce
3 tbsp soy sauce (low sodium preferred)
1 tbsp oyster sauce (optional but recommended)
1 tbsp rice vinegar or lime juice
1 tbsp honey or brown sugar
1 tsp sesame oil
1–2 tsp sriracha or chili flakes (optional)
¼ cup chicken broth or water

Cooked white rice, brown rice, or jasmine rice
Instructions
Step 1: Prepare the Ingredients : Chop and slice all vegetables so they’re ready to go. Mix the stir-fry sauce ingredients in a small bowl and set aside.
Step 2: Cook the Turkey : Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the ground or sliced turkey and cook for 4–6 minutes, breaking it apart if using ground meat. Season lightly with salt and pepper. Remove and set aside.
Step 3: Sauté the Aromatics : In the same pan, add the remaining tablespoon of oil. Add onion, garlic, and ginger. Cook for 1–2 minutes until fragrant.
Step 4: Add the Vegetables : Add bell pepper, broccoli, snap peas, and carrots. Stir-fry for 4–5 minutes until vegetables soften but still have crunch.
Step 5: Combine Turkey and Sauce : Return turkey to the pan. Pour in the stir-fry sauce and toss to coat everything. Cook for another 2–4 minutes until the sauce thickens slightly and everything is heated through.
Step 6: Serve : Serve hot over a bowl of freshly cooked rice. Garnish with green onions.
