Instructions

Step 4: Lightly beat the eggs in a bowl and pour them evenly over the tomato mixture.
Step 5: Gently stir the eggs into the tomato mixture, allowing them to cook slowly. Stop stirring when the eggs are soft and creamy. Avoid overcooking for a tender texture.
Step 6: Remove from heat and garnish with freshly chopped parsley.
