Ingredients
  

  • 4 large ripe tomatoes, peeled and chopped
  • 3 large eggs
  • 1 medium onion, finely chopped (optional)
  • 1 green bell pepper or Turkish green pepper, chopped
  • 2 tablespoons olive oil or butter
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon paprika or red chili flakes (optional, for heat)
  • Fresh parsley for garnish
  • Crusty bread for serving

Instructions
 

  • Step 1: Heat 2 tablespoons of olive oil or butter in a medium skillet over medium heat.
  • Step 2: Add chopped onions and peppers, sautéing for 3–4 minutes until they soften.
  • Step 3: Add the chopped tomatoes, salt, black pepper, and paprika or chili flakes if using. Cook for 5–7 minutes, stirring occasionally, until tomatoes break down into a saucy consistency.
  • Step 4: Lightly beat the eggs in a bowl and pour them evenly over the tomato mixture.
  • Step 5: Gently stir the eggs into the tomato mixture, allowing them to cook slowly. Stop stirring when the eggs are soft and creamy. Avoid overcooking for a tender texture.
  • Step 6: Remove from heat and garnish with freshly chopped parsley.
  • Step 7: Serve hot with crusty bread to scoop up the flavorful eggs and tomato mixture.
