Ingredients
  

  • For the Cajun Boil:
  • 2 lbs (900g) large shrimp, peeled and deveined
  • 1 lb (450g) smoked andouille sausage, cut into 1-inch pieces
  • 1 lb (450g) small red or Yukon potatoes, halved
  • 4 ears of corn, cut into halves or thirds
  • 1 large onion, quartered
  • 4 cloves garlic, smashed
  • 1 lemon, halved
  • 4 tbsp Cajun seasoning (store-bought or homemade)
  • 2 tsp smoked paprika
  • 2 tsp salt
  • 1 tsp black pepper
  • 2–3 bay leaves
  • 1 stick unsalted butter, optional
  • 6 cups water (or enough to cover ingredients)
  • Optional Garnish:
  • Fresh parsley, chopped
  • Lemon wedges
  • Additional Cajun seasoning for serving

Instructions
 

  • Prepare the Pot: Fill a large stockpot with 6 cups of water. Add Cajun seasoning, smoked paprika, salt, pepper, bay leaves, lemon halves, onion, and garlic. Bring to a boil over high heat.
  • Cook the Potatoes: Add halved potatoes to the boiling water and cook for 10–12 minutes until they begin to soften.
  • Add Sausage and Corn: Add sausage pieces and corn halves to the pot. Cook for an additional 5–7 minutes, allowing the flavors to combine.
  • Add the Shrimp: Add shrimp to the pot and cook for 2–3 minutes until they turn pink and opaque. Avoid overcooking.
  • Optional Butter Finish: If desired, stir in a stick of unsalted butter for richness.
  • Drain and Serve: Drain the shrimp, sausage, potatoes, and corn using a large colander. Transfer to a large serving platter or spread over a table covered with newspaper for an authentic experience.
  • Garnish: Sprinkle chopped parsley over the top and serve with lemon wedges and extra Cajun seasoning on the side.
