Prepare the Pot: Fill a large stockpot with 6 cups of water. Add Cajun seasoning, smoked paprika, salt, pepper, bay leaves, lemon halves, onion, and garlic. Bring to a boil over high heat.
Cook the Potatoes: Add halved potatoes to the boiling water and cook for 10–12 minutes until they begin to soften.
Add Sausage and Corn: Add sausage pieces and corn halves to the pot. Cook for an additional 5–7 minutes, allowing the flavors to combine.
Add the Shrimp: Add shrimp to the pot and cook for 2–3 minutes until they turn pink and opaque. Avoid overcooking.
Optional Butter Finish: If desired, stir in a stick of unsalted butter for richness.
Drain and Serve: Drain the shrimp, sausage, potatoes, and corn using a large colander. Transfer to a large serving platter or spread over a table covered with newspaper for an authentic experience.
Garnish: Sprinkle chopped parsley over the top and serve with lemon wedges and extra Cajun seasoning on the side.
