- 6 large eggs
- 1/4 cup milk or cream
- 1 cup shredded cheese cheddar, mozzarella, or feta
- 1 cup spinach fresh or frozen
- 1/2 cup bell peppers chopped
- 1/2 cup onions chopped
- 1/2 cup mushrooms sliced
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1/2 teaspoon dried oregano or Italian seasoning
- Optional: cherry tomatoes zucchini, broccoli
Prepare the Oven Preheat your oven to 180°C (350°F) to ensure even cooking.
Sauté the Vegetables Heat olive oil in an oven-safe skillet over medium heat. Add onions, peppers, and mushrooms. Cook until softened, about 5–7 minutes. Add spinach and cook until wilted.
